I've been a vegetarian for close to 10 years and enjoy every aspect of it. I love exploring new ways of nourishing my body all while keeping it fun and simple. I am not the world's greatest chef but that doesn't stop me from attempting to cook up a storm in the kitchen. With that said, I am constantly searching for delicious yet simple vegetarian recipes. Enjoy the first post of "Vegetarian Bites" where I will be sharing my favorite vegetarian recipes with all of you. When I came across Mimi Ikonn's beautifully designed vegetarian cookbook, I knew that I would not be disappointed. Below is the recipe for my latest breakfast obsession - Mimi's Pizza Omelet.

{Pizza Omelet}
Ingredients:
6 eggs, beaten ...............................................................
1 medium yellow or white onion, chopped .....................
1 green pepper, sliced ...................................................
1 cup button mushrooms, chopped ................................
2 tablespoons of olive oil (more as needed) ...................
salt and pepper as needed ................
Directions:
Preheat oven to 350 degrees F.
Heat the olive oil in a large oven safe frying pan over medium heat and add the onions. Sauté for 1 minute, then add the mushrooms and green peppers. Season with salt and pepper and continue sautéing them for about 5 minutes.
Transfer the frying pan into the oven and bake for 3 minutes, or until the top of the omelet is set and slightly browned.
